A room with old stones and an arched window facing the vines of the Domaine de la Citadelle and the beautiful village of Ménerbes part of the best villages of France. A peaceful scenery. 18 seats in an intimate, warm and friendly atmosphere. Nicolas’ cuisine is 100% homemade with fresh and seasonal products from our local farmers.

After graduating from the Lycée Paul Augier in Nice in 2009 with a speciality in culinary arts, Nicolas set off to live his dream and travel for 10 years. His aim? Gather as much experience as possible! In France, Italy, Canada, England, Germany and New Zealand, Nicolas has developed his cuisine and gained experience in all the gourmet and Michelin-starred restaurants he has worked in. After a rich experience his dream comes true in january 2019: he opens his own restaurant with Margaux.

Margaux

After obtaining her Bachelor’s degree in International Hospitality in 2011 from the prestigious Vatel Lyon school, Margaux realised her dream of finishing her studies in the United States. In 2012, she graduated with an MBA in International Hospitality from Vatel Los Angeles. She is passionate about the luxury hotel industry, in particular for its rigour and the quest to always go the extra mile to ensure customer satisfaction. She built up her experience in France and abroad in major hotel groups such as Peninsula Hotels, Marriott and Relais & Châteaux. Her involvement has given her a strong and authentic professional experience every time. The New Zealand chapter, as Front office manager at Relais & Châteaux The Farm at Cape Kidnappers, remains her favourite. “Guest relations are part of me, I always make sure that customers feel good”.

Margaux and Nicolas it is a beautiful love story.

Considering their respective backgrounds, how they met and the unforgettable experiences they shared together, the idea of opening a restaurant together was an obvious one. After 3 years in New Zealand, they chose to settle in the Luberon, which shares with New Zealand an exceptional quality of life, rich and abundant agriculture, not to mention a very high quality wine.

Ever since he was a child, Nicolas always wanted to open his own restaurant. It was his absolute dream ! And for Margaux, opening a restaurant with Nicolas was a personal and professional achievement. In January 2019, the restaurant Tayac first open in Coustellet, where in 5 years, the restaurant will have a large success. They both are so passionate. They make sure that your experience is unique.

Nicolas is a true passionate !
As a child, Nicolas loved following his grandfathers into the vegetable garden, picking fruit, vegetables and even aromatic herbs! He would then put on his apron and help his grandmothers to prepare the dishes of Nice and Malta in beautiful copper saucepans. With its Mediterranean and international influences, Nicolas’ cuisine is generous, colourful and gourmet.
